Create User Account -- options

Hello, I'm trying to configure the sign-up process for new customers on my site.

 

Everything works great, except I can't figure out how to exclude certain options from the signup process.

 

For example:

 

1) I do not want gender to be a required field, or would like to be able to add a third option for those who do not fit within the gender binary

2) I do not want there to be a checkbox that says "receive special offers from our partners" (what does this even mean, anyway?  What would happen if someone were to check that box?)

3) I would like to edit the Additional Information field to let them know to include information about a gift certificate if they've ordered one, so I just need to edit that field, not the text box.

 

Does anyone know where this input information lies (i.e. which directory/file) so I could tweak it with these above adjustments?
