The database tables change from version to version, the only safe way to do it is to run the upgrade processes from the Prestashop installer. You cannot create a backup of one version of Prestashop and restore it in another version. The database tables change from version to version, the only safe way to do it is to run the upgrade processes from the Prestashop installer.
