I updated PrestaShop from 1.4 to 1.6. When updating PrestaShop 1.6 to 1.7 in the module 1-Click Upgrade I have:

706 files left to upgrade.
306 files left to upgrade.
All files upgraded. Now upgrading database...

500 Server Error
Oops, something went wrong.

I am looking for answers what I can do wrong?

Disable non-native modules
Upgrade the default theme

I would suggest to try a manual upgrade this should work, Make sure to backup you webstore and mysql databank.

You should rather investigate (activate debug mode) and fix the issue
