Best way to duplicate a store?

Hi all

I wanted your opinion before I start to tackle the following project:

I have an existing store with multiple categories and products.
I would like to create a new store specializing in only one category and duplicating all the products from that category from the existing store.

Is there a simple way to do this?
I imagine I could do a backup of site1 and import all the tables into site2 and then delete the unwanted products by hand?

What tables contain only the product information?
