Using an existing configuration of an old shop to a new shop? What needs to be copied?

We already have an existing shop using 1.3 prestashop script, we want to start another online store but we don't want to redo all the configurations that we already did on the existing store. Can we copy the all the configurations, languages, currencies and and anything else that is not related to the product/catalog to the new store? How can we do this?

Is it possible to just export the database of the old store minus the product and category tables? and Import it the new store?
