But when I'm editing my products in either "short description" or "description" every key stroke takes about 2 seconds to actually appear. I'm using version 1.6 in MultiStore mode. I assume you upgraded and now are on version 1.6.1.1, if so then just a cursory look at forum for this release indicates this issue and there are 'any' number of fixes but ps is recommending now wait for next release to fix. if you have different version, let us know, but in the future helpful if you post more information.
