E-Mail Notification Personalization

Im trying to personalize my automatic e-mail notifications but im having some trouble.

Example: In the order_confirmation email. I dunno if the tax is included in the "Total Paid" or not if it is i would like to have it separate. Like the shipping is.

Example:

Subtotal: ##.##
Shipping: ##.##
Tax: ##.##
Total Amount: ##.##

Can anyone tell me all the codes that would be needed in order to customize the email such as {firstname}, {lastname}, {id_order}, {shop_name}...etc.

Anything else that i forgot to mention concerning the email personalization please let me know.
