Let's say I buy a product "A" which costs € 30, in the order summary in backoffice I find that the order includes the product B plus the product C + D and in the end product A truly purchased and the total payable instead is 30 €, so how much does the only product A ....

Then in the summary that arrives by email to the customer instead is right while in the summary of the front office customer also appear other products ....

You haven't removed all test records from some tables in the database. If you still can, use the PrestaShop Cleaner module.
