Layout and other things concerning shop e-mails

Hi there,

I have a few questions concerning the e-mails the shop sends to me.

1. The Layout: Rigth now the e-mails are starting with "Hallo {surname} {name},". Ugly! Where do I define {surname} {name}? And where do I define the logo?
2. The Layout of my reply: Is it possible to include the original text of a customer request in my reply? How do I define the topic (in german "Betreff", don´t know the correct english term) of the reply?
3. When I have a new order in the shop I´m getting the order notification in five (!) copies. Where do I fix that?

Hhm, I think that should be enough so far.

PS: Ah, I forgot: Right now I am using PS 0.9.7.2. Is it necessary to upgrade to 1.0?
