Creating a grid of categories in centre column

Hi,

 

I would like to have a grid of categories on the home page in the centre column and also displayed in the centre column whenever the categories are selected from the left sidebar, like this example:

 

http://www.greenpeawholefoods.co.uk/

 

and also have the subcategories displaying the same way as the example.

 

Whats the best way of doing this?
