If I buy one products I find, in the order page in the backend, 2 more products to my order. In the shipping box I see 3 different carriers and not just one. I assume the answer is yes, in which case, you did not delete them properly, and ps_order_details (and possibly other order related tables) still have data from the old orders. Just install the module via the back-office Modules>Add new module, and select this Zip file. I'm not sure if it clears other tables that might be causing this, but it's a good free module anyways.
