Sign in issues, add to cart issues, apparently related to cookies

Hello,

We have several technical issues that we haven't been able to resolve for almost a year....
Here they are:

- The customer tries to connect to his account, he puts his ID and password, he validates and the site sends him back to the login page and he does not recognize his ID and password; or he will be redirected to a page "This page is not working. Unable to process this request via www.biovie.fr at the present time. HTTP ERROR 500"

- The customer puts items in his cart, a message says that they are added and another message says that there are no products in the cart, and indeed the cart remains at 0.

- Payments that seem to be accepted and validated but the customer contacts us a few days later when he realizes that he has not had an order confirmation and that the payment has not been debited from his card. Orders that fall into oblivion...

- We have per period the site unavailable with the info "Bad request" or "error 500"

We have noticed that in private browsing, these problems no longer exist. Our emergency solution is to offer our customers to delete cookies. It works sometimes, but not always. But this is not a viable solution.
We have already got the help of our web developer and we have hired a freelance prestashop specialist who failed to find the source of the problem, and therefore failed to solve it. We also contacted prestashop, without success. These cases occur very randomly and the problem is not reproducible. So when our web developer, the presta specialist or the prestashop support do the tests, unfortunately it works well! So not possible to solve the problem.

Our web developer thinks it's a cookie issue.

We are currently on Prestashop 1.7.8.7

Has anyone encountered these issues before?

Did you solve those issues?

We have similar problems with cookies and we have been trying to solve them for more than a year, without success. We have already spent a lot of time and money!

If you could help me I would be very grateful.
