We wybranych kategoriach chyba można. Istnieje też moduł pod produkty https://addons.prestashop.com/en/other-payment-methods/25827-restrict-hide-payment-method-by-product-category-group.html

Można też pogrzebać w kodzie presty ale nie polecam:
