All the order that I test placed keep on showing up on my customer account.

Hello, I deleted a product from my website, but whenever an customer placed any order it just appear on they account. Also, appear on they account is waiting for check payment and old date of time that I was testing my cart also, appeared on they account. Customers stop ordering, because of it. Hello Every time I set a tracking number an emails is automatically sent, I want to stop this email and sent the tracking code on the "shipping" email. I can't find any settings that enable me to deactivate the "in transit" emails. Thank you Tom
