Own theme and original CSS

Question to all theme designers (but also Prestashop users) out there - is it important for you to keep the majority of the original Prestashop theme CSS definitions? I have my own coding scheme and quite frankly often it would be quicker if I have rewritten most of the original CSS from scratch instead of trying to modify it.

I haven't bought a paid theme yet, so I have yet to see - do paid theme designers alter the CSS definitions heavily or do they usually try and keep most of the stuff, modifying mostly the parameters?
