Wont save - Get a 500 error page :(

Hi there, we have updated to the latest version of PS and updated all add-ons and such. We try to add a description, image or even edit a current product in any way, and hit save...it takes about 20-30 seconds and then kicks us out to a 500 error page. The store is in maintenance for product updates. The website is live. I have tried to change the settings in the 'theme' - No change. Any help would be appreciated
