500 Internal Server Error during paypal/redirect.php

@Hypno : I had the same issue as yours since I'm upgrading my PS shop to PS 1.3.2.3 (from 1.3.1.1).
Indeed the Paypal module version is upgraded also (from 1.6 to 1.7.1) while upgraging PS.
I resolved the issue by changing the CMOD rights of my PayPal directory to 755 (before it was set to 777, as noticed in the wiki), and I used the recursive option (subfolder & files).
Now it works on my side.
Hope it can help you.

I found the solution if your still having problems is changing your modules folders permission to 755 recursively(files and folders). Mine was set to 777 since prestashop tells you to do that on install, yet aparently its supposed to be 755.
