Want to disable product pictures, and also sell product by weigh/piece

Hi All.. could one of you assist me with advice on this..

 

1. I sell products that dont need a picture - on the mobile template at least its much easier for me to not have the pictures. Would any one know how to disable the pictures

2. I sell products both by piece and by weight - any suggestions on how to have some products by piece and others by weight?

3. Finally - any way for customers to have on their order form a desired delivery date and time through a date picker or something of the kind?
