Is there any possibility so the user can be subscribed to some category and receive an alerts when there's a new products in some category?

Yes, but it will require create a new module for that, which will record each user who want to get notified for each category, and send them the email when a new product is added.

There's a hook (NewOrder) which you can use to trigger the emails.
