not available text on product-list.tpl

I must have stock control OFF, but i want a text when i put a product not available and im not able to do it. Can someone help me?

i got this on product-list.tpl:

{if isset($product.show_price) && !$product.show_price}TEXT{/if}

So when i put product not available and i hide the price the text shows... but nothing happends

Since i am building the shop i got Force Compile Activation always ON (thx for the advise though, but i already knew it )... i can reach to make the text apear, but not when i want to
