How to customise the product customisaton box

we are wanting to change the maximum characters allowed in the product customisation box but are unable to find anything to help us. Is there anything where we can set each box to a different maximum characters allowed.

ie some boxes to be set at 20 characters maximum, some at 5 characters maximum.

Any help would be greatly appreciated.
