Problems with translating emails

We have great difficulties in translating and modifying the emails sendt from PS. No matter where or how we translate and amend the emails, they are still not used when testing. According to the developer of the theme, the theme does not overrite the emails.

Do you know where exactly we can find the emails on the server as the back office translation apparently does not work? Or how we can translate and amend the content of the emails?

And do you know if it is possible to add the shop's address, email and phone no. instead of the wording 'Powered by Prestashop' which we are not interested in having displayed?
