Error 500 message on multiple cases

Prestashop 1.7.6.4 installation on pood.e-aiand.com with Inmotion Hosting, using PHP 7.2 .

Installed in April 2020. It worked fine  a few months and then I put the shop in maintenance mode (as I had to be away and did not have access to the shop at all). Today, I started to deal with it again - but for some reason, I can not reach nearly anything on backend, be it Products, Categories, Module Manager or even my profile. All the time I am getting the 500 Server Error message. 

I contacted the Inmotion Hosting technical support and we had a long chat, nearly an hour. They did not found any issues in their log files that could at least hint what is wrong. They also tried with different versions and settings of PHP - still nothing.

Any ideas what should i do?

I can reach statistics, though, and orders as well as carriers - but it's nearly all...

I'm facing a problem just like that, however my shop hasn't been in maintance mode or anything....

Maybe that's good - in a sense that probably more than us two have had or are having the same problem and someone might have found a solution already. Let's wait for more answers!
