Best practice updating a custom theme?

I have Prestashop installed locally and developing my own theme. I have also installed the theme (90% finished) on the live server (the store is not opened yet).

But, what is your best practice / tips when I want to update the theme on the live server? Do you use FTP and send just the updated files?

I have done some local testing, and I think this workflow will work:

1. Switch the live store back to Classic
2. Export the updated theme from my local store
3. Delete the old theme from the live server (it does not seems that the folder is trashed though?)
4. Import the new zip file (no errors as far as I know)

Any suggestions for another workflow?

I am also wondering what is the best way of deploying theme updates from local environment to production.
