Discovered the reason for my issue. 

There are some tests orders in cancel status, and they are holding the product hostage.

Could someone explain what's the prestashop logic in here? Don't think in places like Amazon, a cancelled order or declined order would keep the product hostage until someone checks each one of them.

At the same time, what's the process to actually do it properly? From a backend perspective and from code perspective?

I don't see a cancel product option on the backend, and don't see a way to return the product back to stock other than delete the product from the order. Somehow, doesn't seem normal to me.
