Email - Template

Hello,

I have a problem with my email template.
I saw the folder mails with the email templates inside.
Now I have some questions:

1) Is it possibile to send a personalized email to the shopowner? In this case to me?
2) How can I specify some variables in there?
For my internal System
I need: ART-CODE (reference), PRODUCT NAME, QUANTITY, PRICE, DISCOUNT (percentage per product)
It's kind of a smile CVS I can directly insert in my ERP-Software.
& Delivery Address, Customer's address.

It's no problem just to modify the PHP/TPL/HTML-Code, only problem is, that I've no idea where to look for the right variables.
Because in the order template I can only find {products}.
