META-TAG / TITLE Jumble

I am fully confused on META-TAGS, my meta tag is impossible to change, and google it is different

You can edit your META-TAGS via
admin panel > preference > META-TAG,
this is blank, when i add text to this it just adds it on to the end of my current META

how can i change the google title and description and my page title.

The page title seems to be a default and is displayed on all pages before the pages own default META-TAG
