Adding extra vars to payment.html mail

i would like to customise payment.html email by adding some extra vars stored on cookies,any way to do this?

 

to be sure this mail email is sent after payment ? wich controler send this mail ?

I've the same issue ! I found where add vars for the "order_conf" (its in the PaymentModule.php who use order_conf) but impossible to find  the "payment" mail...
