Changing Titles of Category and Module Box Headers

I have been trying to find a way to modify the title headers of the category and modules on the public site view. Is there a global way to do this, or if it has to be done piece by piece, where would I look?

 

For example: how would I change "New Products" to "New Merchants", "Viewed Products" to "Viewed Merchants"? And, "There are 2 products" to "There are 2 merchants". and so forth. Basically, I want to replace references to "Products" with "Merchants" almost everywhere on the site. Is there a way (or ways) to do this?

 

I use the basic Prestashop template in 1.4.7.3, with very few modifications, hardly anything custom added.

Now, how do I save those settings when I do the Automatic Upgrades? Do I choose not to overwrite the language packs when setting upgrade perferences? Or do I need to export the language first and then import it afterwards? Or ..?
