31GB is for the product table only OR the complete database?
If it's only for the product table then certainly it's too high for the 1000 products. Ensure any 3rd party module is not storing additional data in the product table.
PHPMyAdmin screenshot of the DB structure (with table sizes) and product table structure can give more insight about the same.
