Spam Protection:

I am looking for a module to add on mystore for blocking certain countries like China, Russin, Iran

Also, looking for adding V3 reCaptcha on various page like login/register or checkout page to prevent the bot attacks on the website.

That module can satisfy your requirement to prevent bot attacks.
 

However, to block certain countries, you can use the default feature of prestashop for ip range based protection. If you enable that option, visitors from the selected countries can visit the website, but cannot place order.
