Delta stock amount and mail notifications

A customer of us, used to use previous prestashop versions, asked us to revert back the stock amount field without delta. In example, it want to directly set a fixed amount, not a delta. Is this possible ?

 

Also, with mailalert module, seems that if stock is set to 0 from the back office, the out of stock email is not sent, only if stock goes under the limit by an order. Is this expected ?
