smarty cache cause error 500

with prestashop 1.7.64 and php73  when we modify templates / modules or CSS, the site goes into error 500. to solve I have to physically delete the cache folder from the filesystem.
Anyone know how to solve?

i add this information.
when i do "clean cache", the file /var/cache/prod/appParameters.php
Appear with '0' permission

if i do a chmod 644 all works good.
