If fefrik's suggestion does not work or if you prefer the backoffice to .php file editing you click configure on the 'Official GDPR compliance' module and go to 'consent checkbox customization'.
There will be dropdowns next to each textbox to choose your language.
This is very useful since by default during the installation you get these checkboxes with no translation in the order/checkout process that look out of place until you translate them. It is weird that built in translations don't include them. The other checkbox might be in the "customer data privacy block" in the module list.
