The process is easy but I found a error due to the fact that the importer of Stock change the principal category of each products after import. Is an error from Prestashop? Prestashop version: 1.7.6.0 This behavior is usually caused by the Advanced Stock Management or by synchronization rules that reset the default category when stock is updated. Check if ASM is enabled and try disabling it to confirm. Also review any third-party modules handling stock updates, as they may overwrite the main category field.
