Export/Import Database

Hi There!!

I am in process of make a copy of an existing website to a new location, and ran into problem in copy database from existing and import it to a new database.

website use english/german language

1. I can generate .sql from server admin
2. I need to do a few changes(remove content from connection tables(3) etc.
3. My problem seems to be char set

Do you have any advice how to keep an exact copy for my import

Any advice is appriciated.
