Insertion datas in dataBase through a form

Hello everyone, I am working on prestashop module and my goal is to modify (or understand) insertion of datas in dataBase through a form by instance :

 

I configure fields_form array to display my form after, I push "save" to add data in the right table of my DataBase (I think renderForm is call).

 

first of all, 1) I want to understand how transfert of data to DataBase is occure and 2) How modify this process to put my own table
