Import from old shop?

This is a big task buddy. The only issue that could make things really complicated is if your store uses third party components and themes.

 

Anyway, take a back up of your website files and the database. Set them a side and then start working on upgrading your prestashop a bit by bit a version after a version.

 

Here is in detail what I would think of doing:

 

1. Back up Database and website files. (the most important. in case you get lost you can get back to old store %100)

2. Uninstall any third party themes.

3. Uninstall any third party modules.

4. Install the Database Cleaner module. Clean and optimize the database.

5. Start upgrading to stable versions ONLY above your version:

https://www.prestashop.com/en/developers-versions (go down in the page)

6. Go to Database cleaner after each upgrade and clean, optimize your database. 

7. When you hit 1.6.1.0 do deep testing to all areas of your website to make sure things work fine.

8. Clean Database and optimize then take a backup and after that, you're good to install third party themes and modules.

Another quicker and easier way would be to export your (categories, customers, products) through the back office and then upload them to the new office with some mild adjustments required.
