Best Approach to add a 2nd language

I have been asked to help with the translation of a French Prestashop site which currently has 300 products on it, a lot with very similar descriptions so there will be a certain amount of copying and pasting.  I would welcome suggestions as the best way to approach the project.

A few questions

 

If the English module is installed, can it be hidden from the public until we are ready to go live ?  If it is, I imagine I could add the English names/descriptions directly into the Prestashop database.

 

If it isn't then how easy is it to import a CSV file with the English text without erasing the existing French text ? Is this a standard operation ? I have seen a few posts where there has been talk of writing scripts.
