Catergory open by default

Just found presta shop this weekend and I Gotta say its amazing. I've run into a few problems. Simple things I assume I am just over looking the solution to.

I am setting up my product categories and I'd like to have some open by default. So the category is not a link at all but just a header to the list of sub catergories. I'd also like to keep some from expanding at all. Forcing the customer to click on it and see the pictures and remaining sub categories. Some of the larger categories look sloppy when all displayed in the side bar.
