Adding custom fields to Prestashop models without hacking the core files?

Is there a definitive way in Prestashop to add custom fields to models/objects, like customer, group, product, order, etc without changing the core files? I would like to achieve it by creating a module.

 

I need that those fields are also editable in back-office. Are there perhaps any filters or action hooks that I can use to customize the display of these fields in the back-office?
