error_log don't save new errors

Hi,

I have an error_log file in the root folder of prestashop but I see that the last errors saved where made when I was developing the website in my staging server, more than one year ago. I found out about this issue today that I had to restore a backup because it was impossible to log in the backoffice. I would like to know if there is something I am missing here... If i have to setup something anywhere or if I am looking for errors in the wrong log file.

I would like to have any kind of log to see what is happening if this situation, or any other, happens again.
