Back office order without customer email

Hello everybody.

I need your help or opinion if possible for you, of course.
The important thing for me is: 30-40% of my clients call me on the phone. This category are most middle-aged people who never use the Internet and have no emails. I need to enter an order in Presta Shop (1.6.1.24) and I cannot do it without an email or use an email that has already been used in Presta. I need, if possible, when adding an order in the Back office, that the email field is not checked for an existing one or is not mandatory.

Fill it with random non-existent emails, may block my email server due to errors sent emails.

I think you could use an email address for this, and you could override the send mail function, where you check if that address is, and if it is, don't send any more emails.
