Fit mail templates to German form of address like "Sehr geehrte Frau" and "Sehr geehrter Herr"

Hello developers and ordinary humans

I am in the last group, yet. A kind of a (o40) script kiddy well descripes my abilities in programming.

Shopsoftware PS 1.7.7.4 Language: German

My challange:

I want to fit the mail templates to my cd/ci and to the German language habits. It is unusual in Germans business and formal letters to say i.e. "Hello Angelo Merthe". We prefer "Sehr geehrte Frau Eowynsdotter" or "Sehr geehrter Herr Merte". I add the possibilite for divers, and want to add the possibilitie to leave the gender blank/unanswered. In this case I obviously have to us the "Hello". Because of GDPR issues and datasecurity I want to blur the name to the first characater of each firstname.

Which possibilities do I have? And please don't tell me to buy an addon. This is a base functionality in my opinion (I already bought 5 modules for running the shop and I think it's fair to spend some money to the developers. But everything in a fair way for both sides)
