Help with update and customization

We are a retail and wholesale manufacturing business that produces customized guitar parts: https://www.soundguitarworks.com/

Currently running Prestashop 1.6.1.20. We'd like to update to V1.7+ and customize order management to handle our more complex parts and shipping options. We have online tools on our previous website that are partially ported to Prestashop, but it has been difficult to fully integrate unique parts on orders.

Using the standard Prestashop product attributes combination system is not very workable in our case, there are millions of combinations. We would like to allow for custom/unique parts in our store and orders without having to generate all iterations of a product.
