Create a custom theme

Hi

we're approaching to build a custom theme, from scratch, for the first time in Prestashop (while we come from advanced experience in Wordpress custom themes, like using Sage 9).

So we're asking for advices from developer that have experience in Prestashop.

We've seen there is a Starter theme but it's deprecated and not maintained.Then, what starter theme/boilerplate you use or what else? As workflow we need to use SCSS, JS ES6, webpack.

Any advices are welcome
